Coffee Story:

We’re thrilled to share our newest release from Ethiopia!

This single estate coffee, located in eastern Sidama, is produced by Faysel Abdosh. Faysel’s methodology with this natural processed lot combines 85 % fully ripe, 10% over-ripe, and 5% under-ripe cherry together. A unique blend of cherries at different stages allows a balance between the sugars and acids in the bean. The cherries are then submerged underwater for 8 hours, before dried on raised beds for 28 days. This unique fermentation process initiates the sugar breakdown which results in a sweeter coffee. This coffee is delicious in both light and dark roasts. Notes of strawberry, honey and sweet tea characterize its light roast, while the dark roast brings out notes of blueberry and dark chocolate.
