Meet our newest natural processed coffee from Ethiopia! This exceptional micro-lot is produced by female farmer Dinkinesh Hirbaye on an 8.2-hectare farm in the renowned Yirgacheffe region. Dinkinesh’s farm, larger than most in the area, allows for meticulous control over small, unique lots, producing a coffee that is truly one-of-a-kind.
During harvest, Dinkinesh employs a dedicated team of 12 people to hand-select only the ripest coffee cherries. These cherries undergo strict inspection for uniformity and ripeness before being placed on raised drying tables, where they naturally dry in the sun for about three weeks. Turned daily and protected from moisture at night, the cherries are carefully dried to perfection. Once fully dried, the outer cherry is hulled, revealing the coffee beans (parchment), which are then sent to Addis Ababa for final processing and sorting to meet the highest export standards.
