Coffee Story:
Mauricio (Moe) Salaverria and his delicious coffees are no stranger to our menu. Moe has been involved in coffee all his life, thanks to his parents and grandparents who were devoted specialty coffee growers in the Apaneca Highlands of Western El Salvador. At a young age, Moe spent weekends at the family farms and beneficio (mill), developing a base of coffee farming knowledge that would continue to grow through his adulthood. With the needs and desires of the specialty coffee market changing, Moe adjusted his agronomy practices and processing techniques to suit these niches. Moe now manages five small farms, an ecological wet mill and a nursery with drying patios. High elevation, rich soil, tropical climate, and selectively harvesting only the ripest coffee fruit by hand has been a testament to Moe’s success. Preserving nature while producing the best quality coffees and contributing to the local economy through job creation for locals, are just a few of Moe’s accomplishments. Moe’s coffee’s span the globe, being sold in Europe, USA and Canada and we are thrilled to have his honey processed coffee from Finca Himalaya on our menu once again.
