Coffee Story:
This coffee is a blend from three powerhouse coffee growing regions in Ethiopia - Yirgacheffe, Sidamo and Guji. Each coffee was processed using the natural dry method, followed by further selection for becoming coffee without caffeine. These lots were then transported to the “Swiss Water Process” decaffeination facility to remove the caffeine using an innovative and chemical free technique.
This storyline begins with ripe coffee cherry being harvested and then sun dried with the fruit still intact to the outer surface of the bean. The coffee is then milled, removing the dried cherry and exposing the coffee seed. The natural dry method is responsible for the fruit and jam like qualities the coffee can exhibit.
Swiss Water decaffeination is a methodology that uses the elements of water, temperature, and time to gently remove caffeine. To start, high-quality green coffee is presoaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee soluble that removes the caffeine but retains the coffee’s flavor integrity, without using chemicals throughout the process.
