Coffee Story:

This coffee is sourced from small family farms located in the birthplace of coffee ~ Ethiopia. The farmers contributing to this coffee are within the region of Oromia, in the Guji Zone. Here, coffee producers deliver their ripe cherries to a collection site within the Guji zone. The coffee cherries are carefully rinsed and sorted for defects or unripe cherries and are immediately placed on raised beds to dry over a period of 15 to 20 days, depending on the weather.

This coffee has been processed “naturally”, which simply means the beans are dried within the coffee cherry. Once the outer cherry is shriveled up around the bean like a raisin, it then under goes a dry milling process which removes the dried cherry skin from the coffee bean that resides inside. It is at this point, that the coffees chosen for decaffeination are selected based on exporters and importers cupping evaluations.

The water processed decaffeination method begins with high-quality coffee and no chemicals or harmful additives used throughout the extraction process. The green coffee is presoaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extracts the caffeine without extracting the coffee’s flavor. In all fairness to the subject matter, this is the abridged version of a very technical process.

As these decaffeination techniques continue to get more refined, we are thoroughly enjoying the benefits of these gems on our menu. This coffee is being roasted at one roast level, best defining its most flavorful attributes. It is our pleasure to introduce this coffee without caffeine for enjoyment of all hours of the day or night.
