Coffee Story:

The farm, Sítio Maranhão began nearly 35 years ago by José Messias’s father, who was the first member of the family to begin farming coffee. The farm was small for Brazilian standards, being 32 acres in size, but the potential for growing excellent coffee was notable. The Messias’s are considered small producers and implement traditional farming methods, allowing Jose to continue the dedication to the production of high-quality coffee. Jose has received many accolades due to the responsible farming practices and high level of organization at both the farm and administrative levels.

As the Messias’s farming history is not as lengthy as most, they’ve made a reputation for growing and processing exceptional quality coffee. José currently manages all activities on the farm, dedicating his time and effort to ensuring the best care and handling is given to every coffee tree and all aspects of harvest and processing procedures. This is to ensure the farm’s promise and mission for quality is carried through. José has had the good fortune to work alongside his son Clayton, and the opportunity to pass on the knowledge that he gained from his own father. A hopeful assurance that the third and hopefully fourth and fifth generations will continue farming coffee amongst this beautiful countryside.

The method used to process this coffee is called, Honeyed. This is a processing technique in which the outer skin of the cherry is removed, and the coffee is dried (typically on raised beds) with mucilage still attached. Mucilage is extremely sweet and sticky, like honey. Differing percentages of intact mucilage around the bean, gives way to a variety of flavors and mouthfeels that can be experienced. Honey processed coffees offer unique taste attributes, often developing a distinct fruity sweetness and juicy body. It has been many years since we have had a coffee from Brazil on our menu and we are truly excited! Cheers and Enjoy ~
