Coffee Story:

This coffee comes to us from small family owned farms in the growing region and department of Huila, Colombia. Huila is in the south western area of Colombia in South America. Colombia, a coffee powerhouse, has been producing coffee for centuries (coffee being brought for propagation to Colombia in the 1700’s). Through good country infrastructure, including roads and technical support at the farm level, coffee from Huila has received much praise over the past decades. Small coffee producers pick and process their coffee at their own micro-wet mills and then dry their own coffee. Typically, the drying takes place on elevated tables inside of solar dryers that provide protection from the rain. The implementation of onsite processing, allows for meticulous care in depulping, fermenting and drying of their coffee.

The main harvest happens between April to August, and the “mitaca” harvest (fly crop) is between December and February. Meaning, this region has the potential to be consistently working in some area of coffee production, whether it be in growing, harvesting or processing for a good portion of the year. This positively affects income and equates to less months of food insecurity and other negative social issues.

This coffee is an “Excelso”, which is a classification of bean size noted specifically in Colombia for exporting purposes. The clarity of flavors produced from this coffee have been undoubtedly welcome. Enjoy this coffee in a light or a dark roast.
