Coffee Story:

Finally!!! For some of you that have been waiting… A lovely coffee WITHOUT caffeine from Ethiopia is here to grace our menu! This coffee is sourced from small family farms within the region of Oromia, in the Guji Zone. The Oromia region is located within the state of Sidamo.

To begin, coffee producers deliver their ripe cherries to a coffee collection site within the Guji zone. Here, the coffee cherries are carefully rinsed and sorted for defects or unripe cherries, and are immediately placed on raised beds to dry over a period of 15 to 20 days, depending on the weather. Natural process simply means the beans are dried within the coffee cherry. Once the outer cherry is shriveled up around the bean like a raisin, it then under goes a dry milling process which removes the dried cherry skin from the coffee bean that resides inside. These raised beds used for drying, are carefully constructed to ensure proper air circulation and temperature control for optimal drying of the coffee. Coffee cherries are also turned regularly on the beds, aiding in even drying while also preventing damage such as mold that could harm the quality of the coffee. After the dried coffee cherry has been removed, and the bean inside is showing an 11.5% moisture content, it is stored in a local warehouse for final quality sorting, bagging and exporting.

It is at this point, that the coffee chosen for decaffeination is selected based on cupping evaluations. This decaffeination process uses WATER, NOT CHEMICALS. A very important detail if you are a person who drinks coffee without caffeine. At the start of this process, green beans are soaked in hot water, which extracts the caffeine out of them. Thereafter, the water passes through a carbon filter, trapping caffeine but allowing the coffee solids and flavors to pass through. The beans are then returned to the flavor charged water to reabsorb the remaining liquid. Water decaffeination is said to extract around 95% of the coffee beans caffeine content.
