Coffee Story:

This coffee is sourced from small family owned farms organized around COMULFAC cooperative and is both organic and Fair Trade certified. COMULFAC was founded in 2013, with its members living in the communities of Datanli, Los Cipreces, Auturias, Monte Rey, Antioquia and El Sacramento. These small towns are all within the department (state) of Jinotega. Farmers in this area vary largely in the size of farms they manage, from 4 to 100 hectares in area. Due to the infrastructure of this area of Nicaragua, it is typical for farmers to own their own micro mill to process harvested coffee cherries. This allows the farmers to begin processing their coffee immediately after it is harvested which is essential for maintaining the quality of the coffee. The ownership of an onsite micro mill also allows for meticulous care in the depulping, fermenting and drying of the coffee. After the coffee is dried to a much lessened moisture content, it is transported to the dry mill for final processing, bagging and export.

COMULFAC was established with assistance from J & M Family (a privately owned export company in Jinotega). The J & M Family has been buying coffee from these farmers for several years. The establishment of this coop model was to help the farmers organize their efforts and combine their resources to develop social projects aimed at improving the quality of life for their communities. With the Fair Trade premium dollars that these growers receive from the sale of their coffee, they can secure micro credit financing, gain technical assistance at the farm and mill level increasing coffee quality and productivity, and gain market training and access to a global coffee economy. These efforts create a trickle down of positivity for the families connected to the works of this cooperative. We are pleased to have this coffee back on our menu and happy to offer it at both a light and dark roast.
