Coffee Story:

This coffee was collected from small family owned farms throughout the state of Oaxaca (pronounced Wah-Hah-Ka), Mexico. The conditions and climate in Oaxaca is perfect for growing coffee in this mountainous region – high altitude, warm coastal breeze and forested slopes to provide shade. The typical farm size for these farmers is less than 5 hectares (approx. 10 - 12 acres) and coffee plants thrive in the prevailing rich organic soil. These farmers are organized around a large coffee cooperative – CEPCO (Coordinadora Estatal de Productures de Café del Estado de Oaxaca). The state of Oaxaca is an area known for its richness in culture and history. CEPCO members belong to one of 6 different indigenous groups residing in the state, often speaking multiple languages.

CEPCO has been successful in accessing international coffee markets for farmers to have greater earning capacity through direct trade relationships. Their mission involves practices of growing coffee sustainably. Through these practices, the living conditions of farmers and their families have been transformed in positive ways. The participation of women has been considered a fundamental part of this cooperatives social development and a “vehicle for progress in their communities”. Promoting organic agriculture has also been a major initiative for coop members. Their decision to become a certified organic coop came out of the concern for the health of the community and to promote plant and animal diversity.

This coffee has been processed by the fully washed or wet method. After the coffee cherries are picked, the pulp is removed from the bean and transported to a water filled fermentation tank. A sticky pulp layer known as mucilage eventually dissolves, the beans are then rinsed and laid out in the sun for drying. This process highlights the natural brightness of the coffee and flavor of the bean. The roast level chosen for this coffee accentuates a rich cup of decadent pleasure.
