Coffee Story:

Our Honduras Decaf offer comes from small family owned farms located near the town of La Labor in the Ocotepeque region of Western Honduras. These producers are members of the COCAFELOL Cooperative, where 20% of the members are women. COCAFELOL has been a model for other coops to learn from in the way of progressive sustainability. Some projects made available to members include the production of organic fertilizers and technical assistance at the farm level.

After the coffee cherry is harvested, it is transported to a central wet mill operated by the cooperative, where the cherry will undergo the washed process method. Initial processing of the coffee cherry is encouraged by the cooperative to be done at the farm, if the producer has the means to do so. Final drying, sorting, grading and export services of the coffee happens at a separate dry mill facility also managed by the cooperative. Certain lots are selected through cupping for becoming coffee without caffeine by way of the proprietary Swiss Water Process. This process does not use chemicals and preserves much of the inherent characteristics this coffee has to offer. Cheers to drinking coffee in the evening hours!
