Coffee Story:

Our newest single origin coffee without caffeine, is yet another offer from the birthplace of coffee, Ethiopia. This offer is from the same small family farms, organized around an exporter named Grima Edema, operating within the Guji zone of the Oromia region. You may be wondering, what makes this coffee different from the last decaf offer from the same producers? The answer is, the decaffeination technique and the actual harvest date.

Although all our decaffeinated coffees are water processed (the method of extracting caffeine from raw coffee beans), there are different proprietary methods that are used to achieve this. The differences in water processed decaffeination techniques produce different qualities of sweetness, body and overall flavors that come through in the cup. The second difference between these offers was actual date the harvest was picked. Although they were harvested within the same season, the time difference of the harvest between each lot was notable. This can promote differences in sweetness, flavors and overall cup quality too, as was experienced when we tasted the 2 coffees, both enjoyable and unique.

This coffee has been processed “naturally”, which simply means the beans are dried within the coffee cherry. Once the outer cherry is shriveled up around the bean like a raisin, it then under goes a dry milling process which removes the dried cherry skin from the coffee bean that resides inside. It is at this point, that the coffees chosen for decaffeination are selected based on exporters and importers cupping evaluations.

The water processed decaffeination method begins with high-quality coffee and no chemicals or harmful additives used throughout the extraction process. The green coffee is presoaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extracts the caffeine without extracting the coffee’s flavor. In all fairness to the subject matter, this is the abridged version of a very technical process.
