Coffee Story:

This coffee was grown in the Alta Mogiana Region, located in the Northern area of the state of Sao Paulo, Brazil. Alta Mogiana has received many accolades throughout the coffee world, for the reputation of producing exquisite and award winning coffees. The Moscardini’s, an Italian family of 4th generation coffee farmers are the ones responsible for this fantastic cup. As producers, they have been investing in new technologies and approaches to farm husbandry and coffee processing, with the end goal of offering something special and unique. This offer is certainly that. What differentiates this coffee from other natural dry processed coffees, is the “controlled fermentation”.

The process of “controlled fermentation” is meticulous. After the cherries are carefully selected and harvested, they are arranged in thick piles on the drying patio, beginning fermentation. During the night these piles are covered, helping to retain moisture and protect the fermenting coffee cherries from weather. Temperature and humidity of the coffee cherries are tracked often for the first 4 days. As this process continues, the coffee cherries are spread out into thinner layers, aiding the fermentation to happen at a slower pace for another 3-4 days. Finally, the coffee cherries are spread out in a single layer across the drying patio, until the desired moisture level is achieved. Now, dried coffee cherry is ready for the dry mill, where finish processing, sorting and grading takes place before export.
